Stir Fried Rice
- 12 cup small shrimp (canned or fresh)
- 12 cup pork roast or 12 cup ham, diced
- 2 eggs, beaten
- 2 tablespoons green peas
- 1 tablespoon raisins (optional)
- 2 tablespoons chopped green onions
- 6 cups cooked rice
- 2 tablespoons salt
- 8 tablespoons oil
- Heat 2 Tblsp.
- oil in pan.
- Pour in beaten eggs and stir fry quickly until eggs are cooked, and in tiny pieces.
- Remove from pan.
- Heat another 3 Tblsp.
- oil in pan and stir fry shrimp and pork or ham; add green peas and fry 1 minute Remove from pan.
- Heat another 3 Tblsp.
- oil and fry the onion and cooked rice, mixing well.
- Stir until rice is thoroughly heated.
- Add all other ingredients to the rice; combine well and serve on pretty plates.
