Easy Breakfast
- 2 medium potatoes
- 1 lb. pork sausage
- 1 small white onion, diced
- 1 (8 oz.) pkg. crescent rolls
- 1 c. shredded Cheddar cheese
- 5 eggs
- 1/4 c. milk
- 1/2 tsp. salt
- pepper to taste
- 3 1/2 Tbsp. Parmesan cheese
- Cook potatoes in skins for 15 minutes; drain and cool.
- Brown sausage and onion in a skillet; drain off excess fat.
- Separate crescent dough into 2 sections of 4 triangles each.
- Place in an ungreased 9 x 13-inch baking dish.
- Press over bottom and up sides just a bit to form a crust; seal holes.
- Spoon sausage in.
- Shred peeled potatoes.
- Add on the sausage.
- Top with Cheddar cheese. Beat eggs, milk, salt and pepper.
- Pour into mix.
- Sprinkle with Parmesan.
- Bake 25 to 30 minutes at 350u0b0 or until set.
