Smothered Chicken Gumbo Recipe

  1. In a large bowl, mix salt, pepper and flour.
  2. Coat chicken.
  3. In a large skillet, heat shortening.
  4. Add in chicken and lightly brown.
  5. Remove chicken and place on paper towels to drain grease.
  6. In large saucepan, saute/fry onion and pepper in butter.
  7. Add in the 7 c. of water and chicken.
  8. Cook on medium heat about an hour.
  9. Add in soup and soup can of water.
  10. Cover and cook till chicken is tender and gravy is thick.
  11. Serve over rice.
