Cuban Salad
- 1 clove garlic
- 1 head iceberg lettuce
- 1 bunch romaine
- 2 sliced cucumbers
- 8 oz. sliced fresh mushrooms
- 1 can hearts of palm, sliced
- 2 oz. grated Mozzarella cheese
- 1 cubed tomato
- 3 Tbsp. green olives
- juice of 1 lemon
- 5 oz. small curd cottage cheese
- pepper
- olive oil
- red wine vinegar
- Crush one clove of garlic and rub in bottom and sides of large salad bowl.
- Add next 8 ingredients to the bowl.
- Salt and squeeze the juice of one lemon over the mixture.
- Toss well.
- Top with cottage cheese.
- Pepper liberally with cracked pepper. Refrigerate until time to serve.
- At serving time, add extra virgin olive oil and red wine vinegar to taste.
- Toss well.
