Luscious Lemon Pie
- 1 1/4 c. sugar
- 3 Tbsp. cornstarch
- 2 c. boiling water
- 2 Tbsp. grated lemon rind
- 1 Tbsp. margarine
- 3 egg whites
- 3 Tbsp. flour
- 1/8 tsp. salt
- 3 egg yolks
- 1/3 c. fresh lemon juice
- 1 (9-inch) pie shell, baked
- 6 Tbsp. sugar
- Combine 1 1/4 cups sugar, flour, cornstarch and salt in double boiler; gradually stir in water.
- Cook until thick.
- Beat egg yolks; add rind, juice and butter.
- Add cooked mixture slowly and return to double boiler.
- Cook 5 more minutes.
- Cool slightly and pour into baked pie shell.
- Beat egg whites until stiff; gradually add 6 tablespoons sugar.
- Continue to beat until glossy.
- Pile on top of cooled filling.
- Bake at 325u0b0 for 20 to 25 minutes until lightly brown.
