Apple Strudel
- 6 oz. Neufchatel cheese (low fat)
- 2 Tbsp. warm water
- 6 thawed phyllo sheets
- 2 Tbsp. melted butter
- 1/2 c. cornflake crumbs, chopped fine
- 8 oz. artificially sweetened jam (apricot or orange)
- 2 medium apples, peeled and chopped fine
- 1/4 c. golden raisins
- 1/2 tsp. lemon juice
- 2 Tbsp. chopped walnuts
- 1 egg yolk mixed with 1/4 tsp. water
- Whisk cheese with water until smooth; set aside.
- On a nonstick cookie sheet, place 2 sheets of phyllo.
- Brush top sheet lightly with melted butter.
- Place 2 more sheets over first two; butter top sheet.
- Repeat with last 2 sheets; then sprinkle buttered top sheet with cornflake crumbs.
- With a spatula, spread 3-inch wide band of cheese along one long side of phyllo, leaving 1/2 to 3/4 inch margin around edges.
- Spread jam over cheese mixture.
