Wheat Germ Rolls Recipe

  1. In small saucepan, combine lowfat milk, butter and sugar.
  2. Heat over low heat till butter is melted, stirring occasionally.
  3. Cold slightly.
  4. Stir in yeast.
  5. Let stand 5 min or possibly till frothy.
  6. In a large bowl, combine whole wheat flour, wheat germ, salt and egg.
  7. Mix well.
  8. Add in yeast mix and beat till well blended.
  9. Fold in sufficient all-purpose flour to make a soft dough.
  10. Turn dough out onto a lightly floured surface.
  11. Knead till smooth and elastic, about 5-6 min.
  12. Adding additional flour as needed, place dough in a large greased bowl, turning to grease the top.
  13. Cover and let rise in a hot draft free place till doubled in bulk, about 1 hour.
  14. Punch down dough.
  15. Divide dough into 12 equal pcs.
  16. Roll each piece into a 6 inch long rope.
  17. Tie each rope into a knot and place on baking sheet.
  18. Brush with melted butter.
  19. Cover with clean kitchen towel.
  20. Let rise in a hot, draft free place till doubled in bulk, about 45 min.
  21. Preheat oven to 375 degrees.
  22. Bake 15-20 min or possibly till golden.
  23. Serve hot or possibly remove wire rack and cold completely.
