Bread Cob Loaf Recipe
- 1 x lge white cob loaf
- 420 gm corn kernels, liquid removed
- 250 gm pkt cream cheese, softened
- 1 c. sour light cream
- 1 1/2 c. tasty cheese, grated
- 4 x bacon rashers, minced & cooked
- 1/2 c. fresh parsley, minced
- 1 tsp curry pwdr
- Heat oven to 180 degrees C. Cut top off the cob so it forms a lid.
- Set aside.
- Carefully remove all the edges to serve as a wall to hold the filling ingredients.
- Combine the corn, softened cream cheese, lowfat sour cream, grated cheese, bacon, fresh parsley & curry pwdr.
- Spoon into the cob & replace lid.
- Wrap loaf in two layers of foil & place on a baking tray.
- Bake for 1hr 15 mins or possibly till heated through.
- Remove foil & then cob lid.
- Arrange on serving plate.
- Serve with crackers.
