Shrimp Or Crawfish Fettucini
- 1 to 2 lb. shrimp or crawfish
- 1 to 2 medium onions, chopped
- 2 to 3 green onions, chopped
- 1 medium bell pepper, chopped
- 2 celery stalks, chopped
- 1 Tbsp. parsley, chopped
- 1 1/2 sticks butter
- 2 Tbsp. flour
- 1/2 lb. Velveeta cheese
- 3/4 c. milk
- 1/2 to 1 can jalapeno relish
- 3 cloves garlic, chopped
- 12 oz. fettucini noodles, cooked
- Parmesan cheese
- season to taste
- Cook fettucini noodles; drain and set aside. Cook onions, peppers and celery in melted butter until limp. Add shrimp or crawfish, parsley and
- flour.
- Cook on medium-low for 15 minutes. Add Velveeta cheese, milk and jalapeno relish.
- Cook until cheese has melted.
- Remove from heat. Add fettucini.
- Put in large Corning Ware. Top with Parmesan cheese.
- Cover and cook in a 350u0b0 oven for 15 minutes.
- Serve well with garlic bread.
