Crostini con San Marco/ Crostini with Capers and Mozzarella
- 1 loaf bread cut thin into slices no thicker than your pinky with crust removed
- 4 fresh sm. mozzarella cheeses in the water, halfed
- 2 tomatoes, sliced thin
- 3 tbsp. chopped capers that have been drained and rinsed, and chopped
- 4 filets of anchovies (optional)
- Chopped basil
- Preheat the oven to 450F.
- Cut the slices of bread in half.
- Place the Mozzarella and 1/2 an anchovy fillet on each piece of bread.
- Sprinkle some of the chopped cappers on top of the crostini and top with a tomato slice.
- Bake until the cheese is melted and the bread is lightly toasted.
- Garnish with the basil.
