Crusty Garlic Bread
- 1 pkg. yeast, divided
- 2 c. warm water (110~), divided
- about 6 c. unbleached or bread flour, divided
- 2 tsp. sugar or sorghum
- 1 tsp. vegetable oil
- 1 egg white (at room temperature)
- 1 small clove fresh garlic, crushed
- 1/2 tsp. garlic powder
- 1 tsp. salt
- cornmeal (for dusting baking sheet)
- In 6-quart mixing bowl, dissolve half the yeast in 1 cup water.
- Add 1 cup of the flour and mix well.
- Let this ferment overnight in a warm (75u0b0) place.
- Add the rest of the yeast and water.
- Mix well. Add the sugar, oil, egg white, garlic, garlic powder, salt and as much of the flour as is needed to make a soft but not too sticky dough. Turn dough onto a lightly floured surface and knead until smooth and elastic (6 to 7 minutes).
