Sharon'S Cashew Chicken Casserole
- 2 c. uncooked elbow macaroni
- 3 c. cubed chicken
- 1/2 c. cubed process American cheese
- 1 small onion
- 1/2 c. chopped celery
- 1/2 c. chopped green pepper
- 1 8 oz. can sliced water chestnuts
- 1 can mushroom soup
- 1 can cream of chicken soup
- 1 1/3 c. milk
- 1 14 oz. can chicken broth
- 1/4 c. margarine (melted)
- 2/3 c. saltines
- 3/4 c. cashew halves
- In a greased 9x13 baking dish layer macaroni, chicken, cheese, onion, celery, pepper and water chestnuts.
- In a bowl combine soups, milk and broth.
- Pour over chicken mixture.
- Cover and refrigerate overnight.
- Toss butter and cracker crumbs and sprinkle over casserole.
- Top with cashews.
- Bake uncovered at 350u0b0 35-40 minutes, till tender.
- Makes six servings.
