Peanut Butter Oatmeal Cookies
- 3/4 c. butter flavor Crisco
- 1 c. peanut butter
- 1 1/2 c. brown sugar, packed
- 1/2 c. water
- 1 egg
- 1 tsp. vanilla
- 3 c. Quaker oats (quick or old fashioned, uncooked)
- 1 1/2 c. all-purpose flour
- 1/2 tsp. baking soda
- granulated sugar
- Beat first 3 ingredients until creamy.
- Beat in water, egg and vanilla.
- Add combined dry ingredients; mix well.
- Cover, chill about 2 hours.
- Heat oven to 350u0b0.
- Shape into 1-inch balls.
- Place on ungreased cookie sheet and flatten with tines of fork dipped in granulated sugar to form crisscross pattern.
- Bake 9 to 11 minutes or until edges are golden brown.
- Cool 1 minute on cookie sheet; remove to wire rack.
- Cool completely.
- Store tightly covered. Makes about 7 dozen.
