Giardiniera
- 4 ribs celery, diced fine
- 1 qt. white vinegar
- 2 qt. water
- 1/2 c. honey
- 1 Tbsp. fennel seed
- 1 Tbsp. celery seed
- 1/4 c. mustard seed
- 1 lb. white onions, chopped
- 2 red bell peppers, seeded and diced fine
- 6 green bell peppers, seeded and diced fine
- 6 hot Italian peppers, seeded and diced fine
- 2 tsp. cracked black peppercorns
- 1 tsp. flaked red pepper
- 6 to 8 cloves garlic, mashed
- Place celery in large pot with vinegar, water, honey, fennel seed, celery seed and mustard seed.
- Bring to a boil, stirring until well blended.
- Add onions and continue boiling 5 minutes. Add peppers and peppercorns.
- Boil 5 minutes more.
