Corn Casserole With A Kick!
- 2 cans Whole Kernel Corn
- 1 can Sweet Cream Corn
- 3/4 whole Red Pepper
- 2 whole Jalapenos
- 2 cups Shredded Sharp Cheddar Cheese
- 1 cup Sour Cream
- 1- 1/2 package Ritz Crackers
- 10 Tablespoons Butter
- Preheat oven to 400F.
- Pour 2 cans drained whole kernel corn in a 13x9 glass pan.
- Pour in 1 can sweet cream corn.
- Dice 3/4 of a red pepper and 2 jalapenos.
- Add to the corn.
- Add shredded sharp cheddar cheese, then add sour cream.
- Mix.
- You can add a couple dashes of salt, pepper, garlic, or any other spices you want.
- After it is all mixed well, mush it down evenly throughout the pan.
- Put the 1 1/2 packages of Ritz Crackers in a Ziploc bag and crush, or you could use your chopper.
- Great for handing over to the kids and letting them smash the crackers.
- Theyll love it!
- The crackers can be finely crushed or just barely broken up.
- Either way, it will still taste delicious!
- Pour the crushed crackers over the top of your corn mixture and pat down evenly.
- And finally, slice butter and put it over the crackers.
- Paula Dean would be proud!
- Bake it at 400F for 15 to 20 minutes.
- You may need to cover with foil towards the end so the top doesnt get too done.
- Enjoy!
