Arroz Azafranado-Saffron Rice Spain
- 1 12 lbs pork (or chicken boneless)
- 2 -3 tablespoons oil
- 1 green pepper, diced
- 1 garlic clove, crushed
- 12 ounces rice (300 gms)
- 1 medium onion, diced
- 3 -4 tomatoes, peeled and cubed
- 1 pinch saffron
- pepper
- salt
- 1 lemon, juice of
- Place oil in saucepan; cook meat in hot oil.
- Add onion, pepper, salt, tomatoes, green pepper and garlic and reduce heat.
- to medium temperature.
- After vegetables appear tender crisp, add salt, rice and a little water as needed.
- Simmer until rice is cooked, remembering to add saffron and stir occasionally while cooking.
- Serve with 1/2 lemon per person to squeeze over each serving.
