Grandmother Helen'S Heavenly Shrimp Boats
- 1 lb peeled & deveined shrimp
- 1 1/2 c. mayo
- 1 c. diced celery
- 1 green onion chopped
- 3 hard cooked eggs, chopped finely
- salt
- white pepper
- worcestershire sauce
- dry mustard
- lemon juice
- 8 hot dog buns
- 1 c. grated mild cheddar cheese
- paprika
- Cook shrimp in water at a boil for 3-5 minutes.
- Mix shrimp, mayo, celery, onion and eggs.
- Season according to taste with salt & pepper, mustard, worcestershire sauce, and lemon juice.
- Spread into opened hotdog buns & sprinkle with grated cheese.
- Top with sprinkle of paprika for color.
- Place on cookie sheet & bake at 400 degrees for few minutes until they are golden brown.
- Serve hot.
