30 Minute Braised Chicken
- 1 large onion, sliced
- 1 tablespoon olive oil
- 1 garlic clove, crushed
- 8 boneless skinless chicken thighs
- 2 apples, cored and cut into chunks
- 4 ounces dried apricots
- 12 cup white wine
- 14 cup fresh parsley, chopped
- Place a heavy pan over high heat, then add the onion with the oil.
- Stir well and cook for 2 minutes, then add the garlic.
- Add the chicken, then cook for a few minutes, turning each piece until they all have a little colour.
- Add the chopped apples and dried apricots, stir well, pour in the wine, then bring to a boil.
- Simmer, covered, for 20 minutes, until the chicken is tender.
- Sprinkle with the parsley.
