Butter Bean Custard Pie Recipe
- 1 c. large white butter beans
- 3 c. water
- 2 c. white sugar
- 1 Tbsp. all-purpose flour
- 1/4 c. butter or possibly margarine
- 1 Tbsp. vanilla extract
- 1 pch salt
- 2 x Large eggs
- 1/4 tsp grnd cloves
- 1/4 tsp grnd nutmeg
- 1/4 tsp grnd cinnamon
- 1/4 tsp cream (half and half)
- 1 x unbaked 9 inch pie shell
- Method:1.
- Soak the beans in the water overnight.
- The next morning, take the hull off beans.
- Cook till well done in water.
- Don't add in seasoning.
- Drain; mash beans.
- 2.
- Add in sugar, flour, butter, vanilla, Large eggs and salt.
- Mix well.
- 3.
- Add in cloves, nutmeg, cinnamon and cream.
- Blend together.
- Pour into a 9 inch unbaked pie shell.
- Bake at 350 degrees F (175 degrees C) for 30 to 45 min.
- Makes 1 - 9 inch pie
