Corn Casserole
- 1/2 green pepper
- 1/2 onion, finely chopped (optional)
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 tsp. salt
- 1/4 tsp. paprika
- 1/4 tsp. dry mustard
- 1 beaten egg
- a little sugar (optional)
- 1 c. milk
- 1/2 c. dry bread crumbs (cubes)
- 1 Tbsp. butter
- 2 c. either whole grain, cream-style or fresh, cooked corn
- 1/2 c. buttered crumbs (either bread or cracker)
- Cook pepper and onion in 2 tablespoons of butter 5 minutes, stirring constantly.
- Add flour mixed with seasonings and stir until blended.
- Add milk and cook until thick.
- Brown bread in 1 tablespoon of butter and add with corn and egg.
- Turn into greased baking dish.
- Cover with crumbs.
- Bake in 400u0b0 oven for 20 minutes.
