Dani's Bayoubaisse
- 1 bunch green onions, chopped
- 2 tbsp veggie oil
- 1/2 onion, chopped
- 1/2 stick butter
- 1 carrot, chopped
- 1 can diced tomatoes and chilies
- 3 tbsp tomato paste
- 3 cup water
- 1 pepper, salt, cayenne, oregano & chili powder
- 1 cooked rice
- 1 lb crawfish or shrimp
- 1 lb catfish
- 3 tbsp flour
- 1 tbsp chopped garlic
- 2 tbsp veggie oil
- 1/2 stick butter
- 1 cup white wine
- saute onion in oil & butter for a few mins, then add in the carrots & green onions.
- Cover & simmer five mins, then add remaining ingredients.
- simmer, partially covered, for 2 hours.
- do not skimp on time!
- dust seafood with flour.
- saute garlic lightly in butter & oil, then add in seafood.
- saute over medium heat until golden.
- add wine & tomato paste, then cook 3-4 mins over low heat.
- toss seafood with sauce & serve over rice.
