Dani's Bayoubaisse

  1. saute onion in oil & butter for a few mins, then add in the carrots & green onions.
  2. Cover & simmer five mins, then add remaining ingredients.
  3. simmer, partially covered, for 2 hours.
  4. do not skimp on time!
  5. dust seafood with flour.
  6. saute garlic lightly in butter & oil, then add in seafood.
  7. saute over medium heat until golden.
  8. add wine & tomato paste, then cook 3-4 mins over low heat.
  9. toss seafood with sauce & serve over rice.
