Annie's Cheesy Wild Rice Soup
- 12 ounces wild rice
- 1 (32 ounce) can chicken broth
- 1 chopped onion
- 6 carrots, chopped
- 3 stalks celery, chopped
- 3 (10 ounce) cans cream of potato soup
- 4 (10 ounce) cans milk
- 1 lb Velveeta cheese, cubed
- In a large soup pot, boil the rice in water for 30 minutes.
- Rinse.
- Boil rice 1 hour more in 1 large can of chicken broth.
- Add chopped onion, carrots, and celery.
- Cook until veggies are tender.
- Add cream of potato soup and milk.
- Add cubed velveeta and cook on low til melted.
- Thin with more milk, if desired.
- Heat slowly -- Do not boil.
