Farmer's Breakfast

  1. In a 1 1/2 quart casserole dish, microwave cook onion and 2 tb.
  2. butter, uncovered for 1 minute.
  3. Add potatoes.
  4. cook, covered for 4 to 6 minutes.
  5. Beat together eggs, milk, and 1/4 teaspoon pepper.
  6. Stir in ham.
  7. Pour over potatoes.
  8. Cook on high for 4 to 5 minutes.
  9. Push cooked portion to center after 1 1/2 minutes, then every 30 seconds after.
  10. Let stand 1 minute after cooking to let egg set completely.

hash brown potatoes, scallions, milk, eggs, butter, ham cooked
