Banana Cake
- 1/2 c. Crisco
- 1 1/2 c. sugar
- 2 large eggs
- 2 c. sifted all-purpose flour
- 3/4 tsp. double-acting baking powder
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1 c. mashed bananas (2 or 3)
- 1/3 c. buttermilk
- 1 tsp. vanilla
- Cream shortening at medium speed.
- Gradually add sugar.
- Add eggs and beat until very fluffy using #8 speed.
- Sift together flour, baking powder, soda and salt.
- Add to other ingredients alternately with mashed bananas, combined buttermilk and vanilla at #1 speed, scraping sides and bottom of bowl frequently during mixing.
- When thoroughly blended, pour into 2 greased and floured 8 or 9-inch layer cake pans.
- Bake in moderate oven at 350u0b0 for 30 to 35 minutes until cake tests done.
