Quinoa and Black Bean Salad
- 1 cup quinoa, rinsed
- 2 cups water
- 1 12 teaspoons ground cumin
- 12 teaspoon sea salt
- 3 tablespoons olive oil
- 2 teaspoons lime zest
- 2 tablespoons lime juice
- 1 teaspoon honey
- 1 (14 ounce) can black beans, drained and rinsed
- 2 cups chopped tomatoes
- 12 cup thinly sliced green onion
- 12 cup packed fresh cilantro leaves, chopped
- Cook quinoa in water.
- Let cool.
- In small bowl, whisk together cumin, salt, oil, lime zest, lime juice and honey.
- In large bowl combine quinoa, beans, tomatoes, green onions and cilantro.
- Add dressing and toss lightly to coat.
