Golden Ham Casserole

  1. Cook potatoes, carrots and celery in a small amount of boiling unsalted water until crisp-tender; drain and set aside.
  2. Saute ham, green pepper and onion in 3 tablespoons of margarine in a medium skillet until ham is golden brown.
  3. Place ham mixture and reserved cooked vegetables in a deep, buttered 2-quart casserole.
  4. Melt 1/4 cup margarine in a heavy saucepan over low heat.
  5. Add flour, stirring until smooth.
  6. Cook for 1 minute, stirring constantly. Gradually stir in milk; cook until thickened.
  7. Add cheese and salt; cook over low heat until cheese melts and mixture is slightly thickened.
  8. Pour cheese sauce over ham and vegetables; sprinkle with bread crumbs.
  9. Bake at 375u0b0 for 25 to 30 minutes.
