Smoky Apple and Cheddar Salad

  1. In large nonstick skillet over medium high heat, cook bacon, stirring frequently, until crisp, 8-10 minutes.
  2. Drain on paper towels.
  3. Cut cheese into 1/4 inch thick slices.
  4. Using 1 1/2 inch shamrock-shaped cookie cutter, cut out 16 shamrocks.
  5. In large bowl, whisk oil, vinegar, dill, onion, sugar, salt and pepper.
  6. Add lettuce, apple and bacon; toss to coat with dressing.
  7. Add shamrocks; toss gently.
