Smoky Apple and Cheddar Salad
- 4 slices bacon, cut into 1 inch pieces
- 4 ounces rectangular chunk cheddar cheese, halved
- 14 cup olive oil
- 2 tablespoons white vinegar
- 2 tablespoons chopped fresh dill
- 2 tablespoons finely chopped onions
- 1 teaspoon sugar
- 14 teaspoon salt
- 14 teaspoon pepper
- 1 head green leaf lettuce, torn, 8 cups
- 1 gala apples, cored, cut into 1/2 inch wedges
- In large nonstick skillet over medium high heat, cook bacon, stirring frequently, until crisp, 8-10 minutes.
- Drain on paper towels.
- Cut cheese into 1/4 inch thick slices.
- Using 1 1/2 inch shamrock-shaped cookie cutter, cut out 16 shamrocks.
- In large bowl, whisk oil, vinegar, dill, onion, sugar, salt and pepper.
- Add lettuce, apple and bacon; toss to coat with dressing.
- Add shamrocks; toss gently.
