Sauteed Eggplant and Mushroom with Herbs
- 1 medium eggplant
- 1 pack mushrooms, any kind
- 1 clove garlic
- 2 Tbsp olive oil
- 2 sprigs thyme
- 6 leaves basil
- to taste Salt & pepper
- Crush garlic.
- Put olive oil and garlic in pot and heat on low until fragrant.
- Add eggplant and saute for 2-3 minutes until coated in oil.
- Add mushrooms and thyme and briefly saute.
- Sprinkle with a little salt & pepper.
- Put on lid (this will create steam inside the pot that will help cook your eggplant without burning)
- Cook for 4 minutes with the lid on, stirring 2 or 3 times during that time.
- When eggplant is cooked, toss in the basil leaves and briefly saute.
- Adjust taste with salt & pepper.
