Easy Caramel Corn

  1. Bring first 5 ingredients to a boil in a saucepan over medium heat, stirring constantly.
  2. Reduce heat to medium low, and simmer 5 minutes.
  3. Remove from heat, and stir in 1/4 teaspoons baking soda.
  4. Combine popcorn and, if desired, nuts in a lightly greased roasting pan.
  5. Pour sugar mixture evenly over popcorn.
  6. Using a lightly greased spatula, stir well to coat.
  7. Bake at 250 for 1 hour, stirring every 15 minutes.
  8. Spread on wax paper to cool, breaking apart large clumps as mixture cools.
  9. Store in airtight containers.
