Healthier Carrot Cake
- 12 cup oil
- 12 cup buttermilk
- 34 cup sugar
- 34 cup brown sugar
- 34 cup egg substitute
- 2 teaspoons baking soda
- 1 teaspoon vanilla
- 1 cup flour
- 1 cup whole wheat flour
- 15 ounces crushed pineapple, drained
- 2 cups carrots, grated
- 12 cup raisins
- 12 cup walnuts, chopped
- 4 ounces neufchatel cheese, softened
- 14 cup butter, softened
- 14 teaspoon vanilla
- 1 34 cups powdered sugar
- 12 cup coconut, toasted
- Preheat oven to 350 degrees F.
- In large bowl combine all cake ingredients, in order, mixing after each addition.
- Pour in lightly sprayed 9X13 inch cake pan and bake 35 - 40 minute.
- Cool completely before frosting.
- For frosting beat all ingredients except coconut.
- Frost cake & sprinkle with coconut.
