Loaded Mediterranean Veggie Sandwich
- 2 slices Whole Wheat Bread
- 2 Tablespoons Cilantro Jalapeno Hummus (See Note)
- 1 leaf Fresh Lettuce
- 1/4 cups Sprouts
- 2 slices Tomato
- 2 slices Cucumber
- 2 slices Red Onion
- 1 Tablespoon Crumbled Feta Cheese
- 2 whole Peppadew Peppers, Chopped
- Toast bread if desired.
- Spread both slices of bread with hummus, then layer on lettuce, sprouts, tomato, cucumber, red onion, feta cheese, and peppadew peppers.
- Slice sandwich in half and serve.
- Note: I use Trader Joes Cilantro Jalapeno Hummus, but if you can find it, use Regular or Spicy Sweet Pepper by Tribe and add cilantro to the sandwich.
