Jalapeno Potato Fritters

  1. Mix hashbrowns, onions, cheese and bacon in a bowl.
  2. Add salt and eggs.
  3. Mix again.
  4. Take a small handful and put it on a cookie sheet with parchment paper.
  5. Press it down and make a little patty.
  6. Better to make it on the cookie sheet than in your hands as its really sticky.
  7. Bake at 375 for 20 minutes.
  8. Turn over and bake again until the bottom is crispy.
  9. Top with a some chopped jalapeno pepper and ranch dressing.
  10. Better to eat hot/warm.
