Jalapeno Potato Fritters
- 1 package Potato Hashbrowns
- 1 Green Onion
- 1 cup Grated Cheese
- 1/4 cups Bacon Bits
- 1 teaspoon Salt
- 2 Eggs
- 1 Jalapeno
- Ranch Dressing
- Mix hashbrowns, onions, cheese and bacon in a bowl.
- Add salt and eggs.
- Mix again.
- Take a small handful and put it on a cookie sheet with parchment paper.
- Press it down and make a little patty.
- Better to make it on the cookie sheet than in your hands as its really sticky.
- Bake at 375 for 20 minutes.
- Turn over and bake again until the bottom is crispy.
- Top with a some chopped jalapeno pepper and ranch dressing.
- Better to eat hot/warm.
