Jamaican Oxtail Preparation
- 5 lb oxtails
- 2 tbsp lemon or lime juice
- 2 packages sazon
- 3 tbsp oxtail seasoning
- 1 tbsp browning
- 1 tbsp soy sauce
- 2 large onions
- 1 large green pepper
- 1 large tomatoe
- 2 tbsp canola oil
- 3 stick thyme
- 1 clove ginger
- 2 clove scallions
- 1 can tomatoe sauce
- 1 dash tomatoe paste
- 2 tsp brown sugar
- 1 dash salt
- 1 dash black pepper
- 1 small red sweet pepper
- 1 dash Tabasco sauce
- 3 stick carrots
- 3 small potatoes
- Stir all ingredients into oxtails
- Let it marinate overnight.
- Separate oxtails from ingredients
- Add canola oil to frying pan
- Cook oxtails on each side for 10 mins
- Transfer oxtails, oil, and the rest of the ingredients to slow cooker
- Put slow cooker on high
- Add just enough water to cover meat or halfway
- Cut up potatoes and carrots
- Put top on slow cooker-let it cook for 6 hours
- Add potatoes and carrots-cook for 1 hour
- Add butter beans (optional)
- Stir and serve
