Broiled Salmon With Onion, Tomato And Lemon Recipe
- 1/4 c. Unsalted butter, (1/2 stick)
- 2 Tbsp. Chopped fresh parsley
- 2 lrg Garlic cloves, chopped
- 2 tsp Fresh lemon juice
- 1 x Salmon fillet with skin, (16-oz)
- 4 x Thin onion slices
- 4 x Thin tomato slices
- 4 x Thin lemon slices
- Heat butter in heavy small saucepan over low heat.
- Add in parsley, garlic and lemon juice and simmer 2 min.
- Preheat broiler.
- Place salmon on large piece of heavy-duty foil; season with salt and pepper.
- Brush salmon with half of butter mix.
- Arrange onion, tomato and lemon slices over.
- Drizzle remaining butter mix over.
- Fold foil over salmon and crimp edges tightly to seal.
- Place salmon package in broiler pan.
- Broil 5 inches from heat source till salmon is just cooked through, about 10 min.
- Serves 4.
