Italian Meat Loaf
- 3 slices white bread
- 1/2 c. milk
- 2 lb. chopped beef
- 2 eggs, lightly beaten
- 2 Italian sausages
- 1/3 c. grated Parmesan cheese
- 1/2 tsp. grated nutmeg
- 1/2 c. dry bread crumbs
- 1/2 c. dry white wine
- 2 c. canned crushed Italian style tomatoes
- salt and pepper to taste
- Preheat oven to 375u0b0.
- Tear bread into pieces.
- Combine bread and milk in a small bowl and squeeze into a soft pulp.
- In a large bowl, combine beef, bread and milk mixture, eggs, sausages, Parmesan cheese, nutmeg, salt and pepper.
- Mix thoroughly.
- Shape into a large loaf about 10 inches long x 3 inches thick.
- Coat meat loaf with bread crumbs.
- Bake 20 to 25 minutes, until golden. Add wine.
- Bake 10 minutes longer.
- Add tomatoes.
- Bake 30 to 40 minutes longer, basting with sauce a few times during cooking. Cool 5 to 10 minutes before slicing.
- Serve with a few tablespoons of sauce over meat loaf.
- It's wonderfully moist.
- Throw a few carrots in the pan while cooking for a veggie.
