Mini taco appetizers
- 20 scoop style tortilla chips
- 1/2 lb lean ground beef
- 20 tsp sour cream
- 1/4 cup grated cheddar cheese
- 3 tbsp taco seasoning
- 1/4 cup bread crumbs
- 1 large egg, beaten
- 1/2 cup shredded iceburg lettuce
- Mix chopped meat, taco seasoning, egg and bread crumbs.
- Form miniature meatballs about the size of a ping pong.
- In preheated 375F oven, bake meatballs for 15- 20 minutes or until browned and cooked through.
- On a platter take tortilla scoop chips, a tablespoon of shredded lettuce, top with meatball.
- Top meatball with teaspoon of sour cream and sprinkle of cheddar cheese.
