Grilled Acorn Squash With Tofu
- 4 medium acorn squash
- 12 cup light firm tofu
- 1 egg
- 2 egg whites
- 3 tablespoons light brown sugar
- 2 teaspoons margarine
- 12 teaspoon ground cinnamon
- 14 teaspoon ground allspice
- 18 teaspoon ground nutmeg
- salt and pepper
- Pierce each squash in several places with a sharp knife.
- Grill over medium hot coals, turning frequently, until squash is tender, 35-40 minutes.
- Let stand until cool enough to handle.
- Cut squash into halves; scoop out and discard seeds.
- Scoop out flesh and mash in a large bowl; add tofu, egg, egg whites, brown sugar, margarine and spices, mixing until smooth.
- Season to taste with salt and pepper.
- Spoon mixture into greased 1 quart baking dish.
- Bake, uncovered, at 350 until mixture is set and toothpick inserted near the center comes out clean, about 30 minutes.
- Let stand 5 minutes before serving.
