Grilled Acorn Squash With Tofu

  1. Pierce each squash in several places with a sharp knife.
  2. Grill over medium hot coals, turning frequently, until squash is tender, 35-40 minutes.
  3. Let stand until cool enough to handle.
  4. Cut squash into halves; scoop out and discard seeds.
  5. Scoop out flesh and mash in a large bowl; add tofu, egg, egg whites, brown sugar, margarine and spices, mixing until smooth.
  6. Season to taste with salt and pepper.
  7. Spoon mixture into greased 1 quart baking dish.
  8. Bake, uncovered, at 350 until mixture is set and toothpick inserted near the center comes out clean, about 30 minutes.
  9. Let stand 5 minutes before serving.
