Killer Pizza (at 2:00 AM)
- 3 cups flour
- 1 cup 130 degree water
- 1 tablespoon olive oil
- 1 package fast rise yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 (8 ounce) can pizza sauce or 1 (8 ounce) can tomato sauce
- 1 clove crushed garlic
- 1 tablespoon emiril lagassie pizza seasoning
- 1 tablespoon pizza seasoning or 1 teaspoon dried oregano
- 1 teaspoon dried sweet basil leaves
- sausage, browned or sliced pepperoni or ham or other meat, some use fennel seed too
- 8 ounces mozzarella cheese, coarse grated
- 8 ounces monterey jack cheese, coarse grated
- allow yeast to"flower" in hot water with some sugar in it-- Mix yeast to uniform cloudiness-- add olive oil to yeast-water mixture-- mix salt with flour and add flour-salt mix to water-oil mix, blend and knead into rubbery-silky ball allow to rise double, roll out on 14 x 17" cookie sheet-- alow to rise again 20-30 minutes apply sauce, toppings, DO NOT APPLY CHEESES NOW!
- wait until baked for 10 minutes at 450 F before removing from oven, applying cheeses and re-heating for 6 minutes or so cheese is melted uniformly rather than burned enough for 5 hungry guys.
