Guess Again Carrot Casserole
- 2 pounds carrots cooked and mashed
- 8 ounces cheddar cheese, very old, sharp
- 1/2 teaspoon salt
- 18 teaspoon black pepper
- 2 tablespoons butter
- 1 medium onions grated
- 1 x green bell peppers optional
- 1 x bread crumbs with butter, optional
- Add cheese, salt and pepper, and butter to mashed carrots.
- Place in a 1 quart buttered baking dish.
- Sprinkle with bread crumbs and dot with the additional butter.
- Sprinkle with parsley flakes.
- Bake at 350F (180C) F for 40 minutes.
