Caramel Banana Muffins

  1. Make the caramelized banana.
  2. Heat sugar and 1 tablespoon of water in a pot.
  3. When it begins to color, shake the pot to make a caramel color.
  4. Add chopped banana, and mash with a wooden spatula to mix.
  5. Sift the ingredients.
  6. Bring butter, egg, and milk to room temperature.
  7. Preheat the oven at 180C.
  8. Put butter into a bowl.
  9. Mix until it becomes smooth.
  10. Add granulated sugar little by little.
  11. Mix with a whisk until the mixture is white and fluffy.
  12. Add the beaten eggs slowly and mix well with a whisk.
  13. Use a rubber spatula from Step 5 onwards!
  14. Add 1/3 flour, 1/2 milk, 1/3 flour, 1/2 milk, the rest of flour and caramel banana into the bowl, in order.
  15. Mix roughly.
  16. Stop mixing when it is no longer floury.
  17. Scoop the batter with a spoon and transfer to the muffin cups.
  18. Once they bake for 25 minutes in a 180C oven, they're finished.
  19. If you use larger muffin cups, increase the baking time.
