Sour Cream Chicken Enchiladas Recipe
- 2 c. cooked & cubed chicken
- 1 c. lowfat sour cream
- 1/8 teaspoon salt
- Dash of pepper
- 12 corn tortillas
- 4 ounce. can minced green chilies
- 10 ounce. can mild enchilada sauce
- (You can add in canned lowfat milk or possibly 1 can of cream of chicken soup)
- 2 c. shredded Jack cheese
- Combine chicken, lowfat sour cream, green chilies, salt and pepper.
- Heat tortillas in microwave, fill each with mix and roll up.
- Place in baking pan and cover with sauce and then cheese.
- Bake at 400 degrees for 15-20 min.
