Spanish Rice and Chicken Casserole.
- 2 cups Uncle Ben's converted brand rice
- 4 cups cooked chicken
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 (14 ounce) cans diced tomatoes
- 2 tablespoons tomato paste
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 4 cups chicken broth
- 1 cup cheddar cheese
- 1 cup black olives, sliced
- 2 tablespoons cooking oil
- In a large skillet, cook ground beef, until brown.
- Add the onions and the bell peppers and cook until tender.
- Add tomato paste, diced tomatoes, and stir well.
- Add the remaining ingredients.
- Bring to a boil.
- Reduce heat and simmer for one hour over low heat.
- Mean while cook pasta according to package directions.
- Serve the chilli over the hot, cooked pasta.
