Yogurt Tomato Cooler
- 1 tablespoon corn oil
- 2 each garlic cloves crushed
- 1/2 teaspoon cumin seeds
- 1 cup yogurt, plain
- 1/2 teaspoon paprika
- 2 each tomatoes finely chopped
- 4 each scallions, spring or green onions finely chopped
- 2 tablespoons mint leaves fresh, chopped
- 1 x salt to taste
- 1 x black pepper freshly ground
- 1 x mint sprigs fresh
- Heat oil in a small saucepan.
- Add garlic and cumin seeds and cook very gently 2 minutes.
- Remove from heat and cool.
- In a bowl, combine cooled garlic mixture, yogurt, paprika and stir well.
- Add tomatoes, green onions, chopped mint, salt and pepper.
- Spoon mixture into a serving bowl and chill several hours.
- Garnish with mint sprigs.
