Potato Yeast Rolls

  1. Mix together warm water, ginger, 1 teaspoon sugar and yeast. Cube and boil potato until tender.
  2. Drain 1 1/2 cups of water and add to the following.
  3. In large bowl, mix sugar, margarine and salt.
  4. When potato and potato water are finished, mash the potato cubes and add potato and water to sugar, margarine and salt mixture while hot.
  5. Allow to cool until lukewarm, beat eggs and mix in.
  6. Add yeast mixture.
  7. Add 4 1/2 cups flour and mix well; add 3 more cups flour.
  8. Use extra 1/2 cup flour and knead into dough.
  9. Shape into rolls; place on pan brushed with oil.
  10. Let rise at room temperature for 2 hours.
  11. Bake at 350u0b0 until golden brown.
