Sour Cream Enchiladas
- 1- 1/2 cup Chicken, Shredded
- 2 cups Shredded Cheese, divided
- 2 cups Sour Cream
- 7 ounces, weight Canned Green Chiles
- 1 teaspoon Minced Garlic (or Garlic Powder)
- 1 cup Chicken Stock Or Broth
- 10 pieces Flour Tortillas
- Combine shredded chicken and 1/2 cup cheese in a large bowl.
- Spoon chicken/cheese filling into tortillas and roll and place seam side down in a greased 9x13 baking dish (all 10 will fit with some creative squeezing).
- Make sour cream sauce in the same bowl by combining sour cream, green chiles, garlic, and chicken stock.
- Mixture will be soupy.
- Pour over rolled tortillas.
- Sprinkle remaining cheese over the casserole and bake for 25 minutes at 350 degrees.
