Quick Fish Stew
- 2 large capsicums/sweet peppers
- 2 large tomatoes
- 1 tsp onion & garlic powder
- 1/2 tbsp paprika
- 1 tbsp butter
- 1 large white fish fillet
- 1 dash cracked black pepper
- 1 pinch salt
- 2 tsp olive oil
- Slice peppers and tomatoes thinly.
- Layer veggies in pot and top with onion and garlic powder and paprika.
- Arrange butter so that it will melt generally evenly over the veggies.
- Cover and cook over low heat while preparing the fish.
- Slice fish into bite-size pieces and mix well with pepper, salt and oil.
- Gently fold fish into veggie stew (colours should still be bright and tomatoes half disintegrated), cover and simmer until just boiling.
- Remove from heat and serve hot with couscous or your preferred alternative.
- Enjoy!
