Oyster Dressing
- 1-1/2 lb. ground beef
- 1-1/2 lb. ground pork
- 4 doz. oysters, ground or finely chopped
- 1/2 loaf French bread
- 1 small can mushrooms, finely chopped
- 1 large onion, chopped
- 3 stalks celery, chopped
- 1 bell pepper, chopped
- 1/4 cup parsley, chopped
- Brown meat and drain off excess fat Add seasonings and cook until tender.
- Simmer for 1 hour on low heat.
- Grind oysters and mushrooms; add to meat mixture.
- Moisten bread with water; squeeze out excess water.
- Break up and stir into dressing.
- Mix well and continue to cook about 30 minutes more on very low heat.
- Season to taste with salt, pepper and garlic powder.
- (Salt in oysters will make a difference.)
- Serve hot or can be served cold on a sandwich.
