Blackberry Dumplings Recipe
- 1 quart Fresh or possibly frzn (loose-pack) blackberries
- 1 c. Plus 1 Tbsp. sugar,
- 1 x Divided 3l4 tsp. salt, divided
- 1/2 tsp Lemon extract
- 1 1/2 c. All-purpose flour
- 2 tsp Baking pwdr
- 1/4 tsp Grnd nutmeg
- 2/3 c. Lowfat milk Cream or possibly whipped cream, optional
- In a Dutch oven, combine the blackberries, 1 c. sugar, 1/4 tsp.
- salt and lemon extract.
- Bring to a boil; reduce heat and simmer for 5 min.
- Meanwhile, in a mixing bowl, combine flour, baking pwdr, nutmeg and remaining sugar and salt.
- Add in lowfat milk; stir just till mixed.
- (Dough will be very thick.)
- Drop by tablespoonfuls into six mounds onto warm blackberry mix cover tightly and simmer for 15 min or possibly till a toothpick inserted in a dumpling comes out clean.
- Spoon in-to serving dishes.
- Serve with cream or possibly whipped cream if you like.
- Yield: 6-8 servings.
