Blackberry Dumplings Recipe

  1. In a Dutch oven, combine the blackberries, 1 c. sugar, 1/4 tsp.
  2. salt and lemon extract.
  3. Bring to a boil; reduce heat and simmer for 5 min.
  4. Meanwhile, in a mixing bowl, combine flour, baking pwdr, nutmeg and remaining sugar and salt.
  5. Add in lowfat milk; stir just till mixed.
  6. (Dough will be very thick.)
  7. Drop by tablespoonfuls into six mounds onto warm blackberry mix cover tightly and simmer for 15 min or possibly till a toothpick inserted in a dumpling comes out clean.
  8. Spoon in-to serving dishes.
  9. Serve with cream or possibly whipped cream if you like.
  10. Yield: 6-8 servings.
