Amy's Beef Stir Fry
- 400 grams sirloin steak - cut into about 2cm strips
- 1/2 tsp garlic
- 1 1/2 tbsp butter for cooking
- 1 tsp oil for cooking
- 1 medium red onion - diced
- 2 medium carrots - peeled and cut into large thin strips
- 2 tomatoes - cut into 8th's
- 1 green capsicum - bell pepper - deseeded and cut into thin strips
- 1 orange capsium - bell pepper - deseeded and cut into thin strips
- 1 red capsium - bell pepper - deseeded and cut into thin strips
- 2 red fire peppers - deseeded and cut into thin strips
- 2 yellow peppers - deseeded and cut into thin strips
- 2 green peppers - deseeded and cut into thin strips
- 1 small bunch of chives - cut into small pieces
- 1 handful of parsley
- 1 salt and pepper to season
- Place butter into a large fry pan or a wok and melt it slightly and then add the oil and let it heat up to hot and add the beef strips and garlic and seal the beef now turn heat down a little and cool to desired preference then remove from heat .
- using the remaining oils and juices in the pan and add the onions , carrots , capsiums and the peppers and toss through to combine and coat all while cooking for a couple of minutes , now add the tomatoes and the cooked steak and toss through for a couple minutes more , now take off the heat and add the remaining ingredients and toss through to combine all .
- serve hot and enjoy .
