Manicotti Marinara With Peppers
- 14 pieces manicotti, cooked and cooled
- 2 Tbsp. oil
- 2 c. yellow and green pepper strips
- 1 c. onion slices
- 2 cloves garlic, minced
- 1 c. sliced zucchini (optional)
- 32 oz. jar marinara sauce
- 1 tsp. dried basil
- 1 tsp. oregano
- 2 c. (8 oz.) Mozzarella cheese, shredded and divided
- 1 3/4 c. (15 oz.) Ricotta cheese
- 1 egg, slightly beaten
- 1/4 c. grated Parmesan cheese
- Cook vegetables in skillet with oil until soft.
- Add sauce and spices.
- Cook 3 minutes.
- Spread half of sauce in 13 x 9 x 2-inch baking pan.
- In bowl, stir together 1 cup Mozzarella, Ricotta, egg and Parmesan cheese.
- Fill tubes with Ricotta mixture; place in dish.
- Pour remaining sauce over pasta; sprinkle with 1 cup Mozzarella cheese.
- Bake at 350u0b0 for 25 to 30 minutes.
- Let stand 10 minutes.
- Serves 7.
