Manicotti Marinara With Peppers

  1. Cook vegetables in skillet with oil until soft.
  2. Add sauce and spices.
  3. Cook 3 minutes.
  4. Spread half of sauce in 13 x 9 x 2-inch baking pan.
  5. In bowl, stir together 1 cup Mozzarella, Ricotta, egg and Parmesan cheese.
  6. Fill tubes with Ricotta mixture; place in dish.
  7. Pour remaining sauce over pasta; sprinkle with 1 cup Mozzarella cheese.
  8. Bake at 350u0b0 for 25 to 30 minutes.
  9. Let stand 10 minutes.
  10. Serves 7.
